To make chocolate pecan pie with cocoa powder, whisk cocoa into the brown sugar, then stir in eggs, corn syrup, melted butter and vanilla, fold in toasted pecans and bake in an unbaked crust at 350°F for 50 to 60 minutes, until the edges are set and the center barely wobbles. Cocoa gives the classic filling a deep, brownie-like chocolate flavor without melting any chocolate.

It is the pie that settles the “pecan or chocolate?” debate at the Thanksgiving table, and it can be baked a day ahead.

What do you need for chocolate pecan pie?

Makes: one 9-inch pie (8 slices) · Prep: 15 minutes · Bake: 50 to 60 minutes · Cool: 2 hours

  • 1 unbaked 9-inch deep-dish pie crust
  • 1½ cups (170 g) pecans, half left as halves for the top, half roughly chopped
  • ⅔ cup (135 g) packed brown sugar
  • ¼ cup (21 g) unsweetened cocoa powder
  • ¼ tsp fine salt
  • 3 large eggs
  • 1 cup (240 ml) light corn syrup
  • 4 tbsp (57 g) unsalted butter, melted and slightly cooled
  • 2 tsp vanilla extract

How do you make chocolate pecan pie with cocoa powder?

  1. Heat the oven to 350°F (175°C) with a rack in the lower third. Set the crust on a baking sheet.
  2. Toast the pecans on a separate tray for 6 to 8 minutes, until fragrant. Let them cool.
  3. Mix the dry ingredients. Whisk the brown sugar, cocoa and salt together until no cocoa lumps remain.
  4. Make the filling. Whisk in the eggs one at a time, then the corn syrup, melted butter and vanilla, until smooth and glossy.
  5. Fill. Scatter the chopped pecans in the crust, pour the filling over, and arrange the pecan halves on top.
  6. Bake for 50 to 60 minutes. Cover the crust edge with foil after 25 minutes if it browns fast. The pie is done when the edges are set and the center wobbles slightly, like set gelatin.
  7. Cool on a rack for at least 2 hours before slicing; the filling finishes setting as it cools.

Which cocoa powder works best?

Any unsweetened cocoa works here, because the filling does not rely on baking soda to rise. Natural cocoa gives a brighter, fruitier chocolate note that balances the sweet syrup; Dutch-process cocoa gives a darker, mellower pie. For more on choosing between them, see baking with cocoa powder.

Grevista is a one-ingredient natural cocoa powder from Vietnamese Trinitario cacao; one pie uses about 21 g. Compare sizes on the Grevista cocoa powder page.

Can you make chocolate pecan pie bars?

Yes. Press a simple shortbread crust into an 8-inch square pan, bake it for 15 to 18 minutes, then pour this same chocolate pecan filling over the warm crust and bake for 30 to 35 minutes, until the edges are set and the center barely wobbles. Bars skip the pie dough, cut neatly into 16 squares and are easier to serve on a crowded Thanksgiving dessert table.

  • Crust: 1 cup (125 g) all-purpose flour, ¼ cup (50 g) granulated sugar, ¼ tsp fine salt and ½ cup (113 g) cold unsalted butter, cubed. Rub or pulse into coarse crumbs, press firmly into an 8×8-inch pan lined with parchment, and bake at 350°F (175°C) until the edges turn light golden.
  • Filling: make one batch of the filling above. Chop all the pecans, or keep a few halves to press on top.
  • Bake and cut: bake until set as for the pie, cool completely on a rack, then chill for at least 1 hour so the squares cut cleanly. Wipe the knife between cuts.

For a 9×13-inch pan, double the crust and the filling and allow about 35 to 40 minutes once filled. Store the bars like the pie: covered in the fridge for up to 4 days.

Can you make it ahead for Thanksgiving?

Yes. Bake the pie a day ahead, let it cool completely, then cover and refrigerate for up to 4 days. Let it sit at room temperature for 30 minutes before serving, or warm slices briefly in a low oven. The baked, cooled pie also freezes well, wrapped tightly, for up to 2 months; thaw it overnight in the fridge.

Planning the whole dessert table? Pair it with a silky chocolate pie, our chocolate Thanksgiving desserts, a crowd-size Texas sheet cake or a pan of cocoa powder fudge.

Frequently asked questions

Can I make chocolate pecan pie without corn syrup?

Yes. Use the same amount of pure maple syrup. The pie will taste of maple and set a little softer, so let it cool completely before slicing.

Can I add chocolate chips?

Yes. Scatter ½ cup of chocolate chips over the chopped pecans before pouring in the filling for pockets of melted chocolate.

Should chocolate pecan pie be refrigerated?

Yes. The filling is egg-based, so keep leftovers covered in the fridge and enjoy them within 4 days.
