Why alkalizing matters3.89 g/100 g total polyphenols and 6.881 mg/g epicatechin. Alkalizing would have removed most of it.

Where do I buy it?

Is it tested for heavy metals?
Yes, by TSL Science, an ISO/IEC 17025:2017-accredited laboratory. Cadmium measured at 0.081 mg/kg — the EU limit for cocoa powder is 0.60. Lead, arsenic, mercury and aflatoxins were not detected. Is it certified organic?
No — and we would rather say so. It is grown using organic practices, with no synthetic pesticides, but it does not carry a USDA Organic certification, so we do not print the seal. Worth knowing: organic certification governs what is added to a crop, not the cadmium a tree draws up from the soil. Here is what the seal actually certifies.
Natural or Dutch-processed?
Natural, non-alkalized. Alkalizing mellows the flavour but removes a large share of the flavanols. Ours measured 3.89 g/100 g total polyphenols and 6.881 mg/g epicatechin. The full comparison is here.
How much can I drink in a day?
One to two tablespoons of unsweetened cocoa suits most healthy adults. At two tablespoons of ours, that is about 0.97 µg of cadmium — roughly a quarter of the California Proposition 65 daily allowance from all foods combined. The arithmetic is here.
