To make chocolate chia pudding, whisk 2 tablespoons of unsweetened cocoa powder into a little milk until smooth, add the rest of 1 cup of milk, 2 tablespoons of maple syrup and vanilla, then stir in ¼ cup of chia seeds. Whisk again after 5 minutes and refrigerate for at least 3 hours, or overnight, until thick and spoonable. No stove, about 10 minutes of hands-on time, and two breakfast jars waiting in the fridge.

The ratio is the whole secret: 1 part chia to 4 parts milk. Get that right, break up the first clumps, and the pudding sets on its own while you sleep.

What is the ratio of chia seeds to milk?

The classic ratio is ¼ cup of chia seeds to 1 cup of milk (1:4 by volume). The cocoa paste thickens it slightly, so this ratio gives a pudding that holds a spoon but still feels creamy. Adjust from there:

What do you need for chocolate chia pudding?

Makes: 2 servings (about 1½ cups) · Prep: 10 minutes · Chill: at least 3 hours

  • 1 cup (240 ml) milk or unsweetened plant milk
  • ¼ cup (40 g) chia seeds
  • 2 tbsp (12 g) unsweetened cocoa or cacao powder
  • 1½ to 2 tbsp maple syrup or honey
  • ½ tsp vanilla extract
  • A pinch of fine salt
  • To serve: berries, sliced banana, yogurt, granola or chopped nuts

How do you make chocolate chia pudding?

  1. Make a cocoa paste. In a bowl or a 2-cup jar, whisk the cocoa powder, salt and maple syrup with 3 tablespoons of the milk until completely smooth.
  2. Add the milk and chia. Whisk in the rest of the milk and the vanilla, then sprinkle in the chia seeds while whisking.
  3. Rest 5 minutes, then whisk again. The seeds start to gel and clump in the first few minutes; a second whisk breaks the clumps so every seed sets evenly.
  4. Cover and chill for at least 3 hours, or overnight, until thick and spoonable.
  5. Stir, portion and top. Stir well, loosen with a splash of milk if it is too thick, divide between two jars and add your toppings just before eating.

Why is my chia pudding lumpy or runny?

A quarter cup of chia seeds sets a full cup of milk into pudding.

Almost every texture problem comes from two things: seeds that clumped before they could absorb milk, or too little chia for the amount of liquid. Both are easy to fix, even the next morning.

Cocoa powder floats on cold milk in dry clumps, which is why the paste step matters. The same trick makes smooth chocolate milk with cocoa powder. Natural and Dutch-process cocoa both work here, since nothing needs to rise; natural cocoa tastes brighter and fruitier, Dutch-process darker and mellower. Our guide to natural cocoa powder explains the difference.

Should you blend chocolate chia pudding?

Blend it if you like a silky, mousse-like texture; skip it if you enjoy the little tapioca-style pop of whole seeds. For a smooth version, blend the set pudding on high for 30 to 60 seconds, then chill it for another 30 minutes to firm up. Starting with the looser 3-tablespoon ratio gives the creamiest blended result.

Prefer something cooked and custardy instead? Our cooked chocolate pudding is made on the stovetop with cornstarch and needs no chia at all.

How do you meal prep chia pudding for the week?

Chocolate chia pudding keeps for up to 4 days in sealed jars in the fridge, so one Sunday batch covers most of the working week. Multiply the recipe by two, mix it in a large bowl or quart jar, and portion it into four small jars after it sets. It thickens a little each day; a splash of milk brings it back.

Keep toppings separate until the morning you eat it: granola and nuts stay crunchy, and fruit stays fresh. A spoonful of homemade chocolate granola on top adds crunch. If you want a breakfast with more chew, our chocolate overnight oats use the same no-cook, night-before method with rolled oats.

Frequently asked questions

How long does chia pudding take to set?

It starts to thicken within 15 minutes, holds a spoon after about 2 to 3 hours, and is at its creamiest after a night in the fridge.

Can you eat chocolate chia pudding warm?

Yes. Warm a portion in a small saucepan or in the microwave in 30-second bursts, stirring in a splash of milk. It turns softer and more like a porridge, which is cozy on cold mornings.

Is chocolate chia pudding vegan?

It is when you use a plant milk and maple syrup instead of honey. Pure cocoa powder is plant-based; see is cocoa powder vegan.

Can I make chocolate chia pudding with cacao powder?

Yes, use the same amount. The pudding sets the same way; only the flavor changes slightly.

How much cocoa powder should I use?

Two tablespoons per cup of milk gives a rich, brownie-like flavor. Use 1 tablespoon for a milder, milk-chocolate taste, with a little less sweetener.
