To make chocolate milk with cocoa powder, stir 1 tablespoon of unsweetened cocoa powder and 1 to 2 tablespoons of sugar with 2 tablespoons of hot water into a smooth paste, then whisk in 1 cup of cold milk. The hot-water paste is the step that matters: cocoa powder does not dissolve in cold milk, so mixing it straight in leaves dry clumps floating on top.

It takes about 3 minutes, and you control exactly how sweet and how chocolatey each glass is. For a fridge-ready version, make the 5-minute cocoa syrup below and stir 2 tablespoons into each glass.

What do you need for chocolate milk with cocoa powder?

Makes: 1 glass (about 1 cup / 240 ml) · Prep: 3 minutes · Cook: none

  • 1 tbsp (5 to 6 g) unsweetened cocoa powder
  • 1 to 2 tbsp (12 to 25 g) sugar, to taste
  • 2 tbsp (30 ml) hot water
  • 1 cup (240 ml) cold milk, dairy or plant-based
  • Pinch of fine salt
  • ¼ tsp vanilla extract (optional)

How do you make chocolate milk with cocoa powder?

  1. Make a paste. In a glass or jar, stir the cocoa, sugar and salt with the hot water until completely smooth and glossy, about 30 seconds.
  2. Add a splash of milk and stir again to loosen the paste.
  3. Pour in the rest of the milk and whisk, or close the jar and shake for 10 seconds.
  4. Taste and adjust. Add the vanilla, a little more sugar for sweetness, or a little more cocoa paste for a darker glass. Serve over ice if you like.

How do you make chocolate syrup for chocolate milk?

A batch of syrup turns chocolate milk into a 30-second drink for the whole week. The same syrup is good drizzled over chocolate waffles.

  • ½ cup (43 g) unsweetened cocoa powder
  • ¾ cup (150 g) sugar
  • ½ cup (120 ml) water
  • Pinch of fine salt
  • ½ tsp vanilla extract

Whisk the cocoa, sugar, salt and water in a small saucepan over medium heat until it simmers, then simmer for 2 to 3 minutes, stirring, until slightly thickened. Take it off the heat, stir in the vanilla and let it cool. It makes about 1 cup of syrup; use 2 tablespoons per cup of milk and keep it in a sealed jar in the fridge for up to 2 weeks.

Why does cocoa powder clump in cold milk?

Cocoa powder is very fine and contains a little fat, so cold liquid beads on the surface instead of soaking in, and the powder sticks together in dry pockets. A small amount of hot water wets every particle first; once it is a paste, it blends into cold milk evenly. Sugar mixed in with the dry cocoa helps separate the particles too. For more mixing tips, see how to use cocoa powder.

Which cocoa powder makes the best chocolate milk?

Unsweetened cocoa lets you choose the sweetness. Natural cocoa gives a brighter, fruitier chocolate flavor; Dutch-process cocoa gives a darker, smoother, more classic “store-bought” taste. Both work, because chocolate milk has no leavening to balance. For drinks in general, see the best cocoa powder for drinking. The difference is explained in natural vs Dutch-process cocoa powder.

Grevista is a one-ingredient natural cocoa powder from Vietnamese Trinitario cacao, which gives chocolate milk a fruity, full flavor. Compare sizes on the Grevista cocoa powder page.

How can you change it?

  • Hot chocolate: heat the milk instead; our hot chocolate with cocoa powder uses 2 tablespoons for a richer mug.
  • Mocha: add a shot of cold brew or espresso; see cocoa powder in coffee.
  • Shake: blend with a banana and ice, or follow our cocoa smoothie guide.
  • Less sugar: sweeten with maple syrup, honey or a sugar substitute, and add a pinch more salt to round off the cocoa.

Frequently asked questions

How much cocoa powder do you put in a glass of milk?

Use 1 tablespoon of cocoa powder per cup of milk for a light chocolate milk, or 2 tablespoons for a rich one, with about the same amount of sugar.

Can you make chocolate milk without sugar?

Yes, but unsweetened cocoa is bitter on its own. Use a sweetener you like, or blend with a ripe banana or a couple of dates.

Does chocolate milk made with cocoa powder have caffeine?

A little, from the cocoa itself. One tablespoon of cocoa powder carries a small amount compared with a cup of coffee; see caffeine in cocoa powder for the numbers.
