The best cocoa powder for hot chocolate is unsweetened, one-ingredient cocoa with enough depth to survive milk. Unsweetened lets you set the sugar. Beyond that it is a flavor choice: natural (non-alkalized) cocoa gives a brighter, fruitier cup, and Dutch-process cocoa gives a darker, smoother one. Both work, because a drink has no leavening to balance.

If your hot chocolate tastes thin, the cocoa is rarely the only cause. Too little cocoa, skipping the paste step and boiling the milk are more common culprits.

What makes a cocoa powder good for drinking?

Hot chocolate is the least forgiving use of cocoa. There is no butter, flour or chocolate bar to hide behind, only cocoa, milk and whatever sweetener you add.

Why does homemade hot chocolate taste thin?

  1. Not enough cocoa. Two tablespoons (11 g) per cup of milk is a good starting point. One tablespoon mostly tastes of milk.
  2. No paste step. Cocoa clumps and floats in a full mug. Whisk it with 2 tablespoons of milk first.
  3. Boiled milk. Heat milk until it steams, about 160°F (70°C). Boiled milk tastes flat.

Does a pinch of salt make hot chocolate taste better?

Often, yes. A small pinch rounds out cocoa’s bitterness, so the cup tastes fuller without more sugar. Vietnamese cafés push the idea further with a salted cream cap floated on top, which you can try in our Vietnamese salted cocoa.

Is drinking chocolate or hot cocoa mix the same as cocoa powder?

No. Most hot cocoa mixes list sugar first, followed by milk powder, cocoa and often thickeners or flavorings. Drinking chocolate usually contains chocolate or cocoa plus sugar. Plain cocoa powder is just cocoa. Check the ingredients list: the first ingredient is the largest by weight.

Who should choose which cocoa for hot chocolate, and who should not buy plain cocoa at all?

Plain unsweetened cocoa is the wrong purchase if you want a drink from one scoop and hot water with no whisking, if you are buying for a child or a dorm room where nobody will measure sugar, if you prefer the mellow, low-acid taste of Dutch-process cocoa, or if you are sensitive to caffeine in the evening — 2 tbsp carry about 25 mg. A single-serve mix or a decaffeinated alternative fits those cases better.
