Back to the Cocoa Powder Guide
The best substitute for cocoa powder is another cocoa product, or unsweetened baking chocolate. Swap in cacao powder or Dutch-process or natural cocoa one for one, or use 1 ounce (28 g) of unsweetened baking chocolate in place of 3 tablespoons of cocoa powder, cutting about 1 tablespoon of fat from the recipe. Carob powder works one for one too, but it tastes milder and sweeter and has no real chocolate note.
It is 9 p.m., the batter is half mixed and the cocoa tin is empty. Do not give up on the brownies yet: most pantries already hold a workable swap, and you only need to know the ratio.
Cocoa powder substitutes at a glance
| Substitute | Ratio for 3 tbsp (16 g) of cocoa powder | Adjust | Best for |
|---|---|---|---|
| Cacao powder | 3 tbsp, one for one | May taste more bitter | Most recipes |
| Dutch-process cocoa (if recipe says natural) | 3 tbsp, one for one | Acidity differs; fine for 3 tbsp or less | Baking, drinks |
| Natural cocoa (if recipe says Dutch) | 3 tbsp, one for one | Same note | Baking, drinks |
| Unsweetened baking chocolate | 1 oz (28 g), melted | Reduce fat in the recipe by about 1 tbsp | Brownies, cakes, sauces |
| Carob powder | 3 tbsp, one for one | Milder, sweeter; no chocolate note | Caffeine-free baking |
| Hot cocoa mix | Not a true swap | Contains sugar and milk powder; cut the sugar | Drinks only, as a last resort |
Can you substitute cacao powder for cocoa powder?
Yes, in most recipes you can swap them one for one. The two come from the same plant; “cocoa” is the standard U.S. name for the powder and “cacao” is a marketing word for a less-processed one. The flavor can be a little more bitter. See cacao vs cocoa powder for the details.
Can you swap Dutch-process and natural cocoa?
Often, yes. Natural cocoa is acidic and works with baking soda; Dutch-process is neutralized and suits baking powder. King Arthur Baking says that if a recipe uses 3 tablespoons of cocoa or less, either type works without adjustments; with more cocoa, you may need to adjust the leavening. Read natural cocoa powder and Dutch-process cocoa powder.
Can I use unsweetened chocolate instead of cocoa powder?
Yes. Use about 1 oz (28 g) of melted unsweetened chocolate for every 3 tbsp of cocoa powder and cut about 1 tbsp of fat from the recipe. Here is how to do it.
- Use unsweetened chocolate. Sweetened chocolate adds sugar the recipe does not expect.
- Measure by weight. About 1 oz (28 g) of unsweetened chocolate replaces 3 tbsp of cocoa powder.
- Melt it and let it cool slightly before mixing in.
- Cut the fat. Reduce the butter or oil by about 1 tablespoon per ounce of chocolate, because the chocolate brings its own cocoa butter.
What should you not use as a cocoa powder substitute?
| Avoid | Why |
|---|---|
| Sweetened chocolate chips or milk chocolate (as a one-for-one swap) | Adds sugar and fat, so the recipe turns sweet and soft |
| Chocolate syrup in baking | Adds sugar and liquid and shifts the batter |
| Instant coffee or chicory | Not chocolate; the flavor and color are different |
Is this right for you?
| Use a substitute if you… | Buy a plain cocoa if you… |
|---|---|
| Need a one-off swap tonight | Bake or make hot cocoa often |
| Already have baking chocolate or cacao powder | Want unsweetened, one-ingredient cocoa for drinks and sauces |
| Need a caffeine-free option (carob) | Want a real chocolate flavor |

Frequently asked questions
What can I substitute for cocoa powder?
Cacao powder, Dutch-process or natural cocoa, unsweetened baking chocolate, or carob powder. The first three keep a real chocolate flavor.
Can I use chocolate instead of cocoa powder?
Yes, if it is unsweetened baking chocolate: about 1 oz (28 g) replaces 3 tbsp of cocoa powder, with about 1 tbsp less fat in the recipe. Sweetened chips or milk chocolate add sugar and fat, so they are not a one-for-one swap.
