Back to the Cocoa Powder Guide
No. Hot cocoa mix is not the same as cocoa powder. Pure cocoa powder is one ingredient: cocoa. Hot cocoa mix is mostly sugar, with milk powder, cocoa, salt and often thickeners or flavorings added. The fastest way to tell them apart is the ingredient list: if it says only “cocoa” (or “cocoa powder”), it is pure cocoa; if sugar comes first, it is a drink mix.
Both have a place in the kitchen. A mix is convenient for a quick mug; pure cocoa lets you decide the sweetness, works in baking, and gives a deeper chocolate flavor per spoonful.
What is the difference between pure cocoa powder and hot cocoa mix?
| Per 100 g | Hot cocoa mix (powder) | Pure unsweetened cocoa powder |
|---|---|---|
| Calories | about 400 kcal | about 230 kcal |
| Total sugars | about 66 g | about 2 g |
| Dietary fiber | about 4 g | about 37 g |
| Protein | about 7 g | about 20 g |
| Main ingredient | Sugar | Cocoa |
In other words, a spoonful of mix is about two-thirds sugar, while a spoonful of pure cocoa is almost all cocoa solids. That is why pure cocoa tastes bitter on its own and why a mix tastes ready to drink.
How do you read the label?
| What the ingredient list says | What you are buying |
|---|---|
| Cocoa (or cocoa powder), nothing else | Pure, unsweetened cocoa powder |
| Cocoa processed with alkali | Pure cocoa that has been Dutch-processed (darker, milder) |
| Sugar, cocoa, nonfat milk, salt… | Hot cocoa or drinking chocolate mix |
| Sugar, corn syrup solids, oil, milk ingredients… | A creamy-style drink mix, with cocoa further down the list |
Words like “100% cocoa”, “unsweetened” and “one ingredient” on the front are helpful, but the ingredient list on the back is the reliable check. If the tin says drinking chocolate, here is how it differs from hot cocoa. For a fuller checklist, see 5 ways to choose a good cocoa powder.

Why choose pure cocoa powder?
- You control the sugar. Sweeten each mug or batter exactly how you like it, or use a sugar substitute.
- It works in baking. Recipes for brownies, cakes and cookies are written for unsweetened cocoa; a mix adds sugar and milk powder the recipe did not plan for.
- More chocolate per spoon. Because it is all cocoa, a little goes a long way in drinks, smoothies and sauces.
- It keeps for a long time. With no milk powder, plain cocoa stays fresh in a dry cupboard; see does cocoa powder expire.
When is hot cocoa mix the better choice?
When speed matters most: a mix only needs hot water or milk. It is also handy for camping, office kitchens and gift baskets. If you like the convenience but want to choose the ingredients, make your own: our homemade hot cocoa mix takes 5 minutes and uses 4 pantry ingredients, and there is a sugar-free version too.
Can you substitute cocoa powder for hot cocoa mix?
Stir 1 to 2 tablespoons of cocoa, 1 to 2 tablespoons of sugar and a pinch of salt with a splash of milk into a smooth paste, then whisk in a cup of steaming milk. The paste stops the cocoa from clumping. The full method is in our hot chocolate with cocoa powder recipe.

Frequently asked questions
Does hot cocoa mix count as cocoa powder?
No. In a recipe that calls for cocoa powder, hot cocoa mix brings mostly sugar and milk powder and only a little cocoa, so the result is sweeter, paler and less chocolatey. Use unsweetened cocoa and add your own sugar.
Can I use hot cocoa mix instead of cocoa powder in baking?
Not one for one. A mix is mostly sugar and milk powder, so cakes and brownies turn out sweet, pale and flat. Use unsweetened cocoa powder, or see our cocoa powder substitutes if you run out.
Is “100% cocoa” the same as pure cocoa powder?
Usually, yes: it means the powder contains only cocoa. Check the ingredient list to confirm there is nothing else added.
Is cocoa powder the same as cacao powder?
They come from the same plant and are used the same way; the name mostly reflects marketing and processing style. See cacao vs cocoa powder.
